Ingredients:

  • 500 ml ale (unfiltered beer)
  • 2 yolks
  • 8 g butter
  • 250 ml cream at room temperature (at least 10% fat)
  • 3 tablespoons of sugar
  • 1/8 teaspoon cloves
  • 1/6 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • Nutmeg – a pinch

Cooking method:

  • Beat the yolk with sugar with a whisk until a homogeneous mass is obtained.
  • Melt the butter in a water bath until liquid is obtained.
  • Pour ale into a saucepan or other container and put on medium heat. Heat up to a temperature of 70-80 degrees, not allowing the beer to boil.
