Ingredients:

  • Turmeric sourdough bread: flour, sourdough, salt, water and turmeric
  • Pepperonata: stewed onions, peppers and tomatoes
  • Tofu scrambled: mashed tofu flavored with turmeric
  • Avocado mousse: crushed avocado with salt, pepper and lemon juice

Cooking method:

  • Spread a thin layer of coconut oil on the bread and toast it in a toaster or skillet.
  • Spread avocado mousse on toast, scramble tofu, and season everything with salt and pepper.
  • Add cooked scramble to toast with avocado mousse.
  • Top with peperonata and garnish with microgreens.
