Ingredients:
- Turmeric sourdough bread: flour, sourdough, salt, water and turmeric
- Pepperonata: stewed onions, peppers and tomatoes
- Tofu scrambled: mashed tofu flavored with turmeric
- Avocado mousse: crushed avocado with salt, pepper and lemon juice
Cooking method:
- Spread a thin layer of coconut oil on the bread and toast it in a toaster or skillet.
- Spread avocado mousse on toast, scramble tofu, and season everything with salt and pepper.
- Add cooked scramble to toast with avocado mousse.
- Top with peperonata and garnish with microgreens.
