Ingredients:
Turmeric sourdough bread: flour, sourdough, salt, water and turmeric
Pepperonata: stewed onions, peppers and tomatoes
Tofu scrambled: mashed tofu flavored with turmeric
Avocado mousse: crushed avocado with salt, pepper and lemon juice
Cooking method:
Spread a thin layer of coconut oil on the bread and toast it in a toaster or skillet.
Spread avocado mousse on toast, scramble tofu, and season everything with salt and pepper.
Add cooked scramble to toast with avocado mousse.
Top with pepperonata and garnish with microgreens.
