3 Quick Pasta Recipes That Require Only Two Ingredients
If you miss Italy as much as we do
During self-isolation, we discovered three unusual recipes for quick and fantastically delicious pasta.
WITH Zucchini AND CHEESE
1-2 medium size zucchini
Provolone cheese or any hard cheese
Drop pasta into lightly salted boiling water. Simmer for about 5-6 minutes until the pasta is soft but firm. Cut the zucchini into strips or circles, fry in olive oil until dark brown with a head of garlic, salt. Lay out on a paper towel. Pour the pasta into the pan where the zucchini was cooked. Add a couple of tablespoons of the water in which the pasta was cooked. Add zucchini and sprinkle with hard cheese, stirring constantly, adding water from the pan to make a creamy sauce. Garnish with fresh green basil when serving.
WITH TOMATOES AND SQUID
Cherry tomatoes – 200 grams
Calamari – 500 grams
Peel the squids and cut into lengthwise strips. Cut the tomatoes into 4 pieces and throw in a heated pan with olive oil and two cloves of garlic. Salt and sweat until fully cooked. Then add the squid and simmer for a few more minutes. Boil the pasta for a couple of minutes less than indicated on the package, and transfer it to the pan with tomatoes and squid, stirring well. Drizzle with olive oil. When serving, add grated lemon zest and finely chopped parsley with scissors.

Pasta Farfalle (in the form of bows)
Cherry tomatoes – 400 grams or ready-made sun-dried tomatoes
